Just this morning I read a quote (thanks Sheila) saying...

Genius. We all do it and it's time we RELAXED a bit starting with this easy and delicious sausage ball recipe. These are so soft and chewy inside. I have dreams about them.
Growing up this was a Shelton Christmas party favorite. Even now as the " kids" are -for the most part- in their thirties we circle the kitchen island waiting for the next batch to unload.
Mamaw Shelton and I had a little chat last night about the do's and don'ts of the recipe:
- DO make ahead of time and freeze.
- DO make more than you think you'll need.
- DO use SPICY sausage if that's your thing
-DONT try to go with a leaner meat. The fat is needed for the ingredients to bind. I mean.. I suppose there is a way to make these more lean but A. It's Christmas and B. Lean recipes are for January ;)
- 1 lb bulk sausage
- 2 c. Bisquick
- 8 oz. sharp Cheddar cheese (grated)
Combine uncooked sausage, cheese, and bisquick; mix well. Form small balls and place on greased cookie sheet. Bake at 400 degrees about 15 minutes, until brown.
How easy is that? This is my jam. Pot luck idea solved.
