Fennel + Citrus Salad Recipe

My curiosity of fennel and obsession with citrus… A work in progress. This is where I turn when the deviled eggs run out. It’s bright, crisp, and just fancy enough to sit alongside the rest of the Easter table.

Fennel + Citrus Salad

Ingredients
– 2 fennel bulbs, thinly sliced (save the fronds)
– 1 orange, peeled and sliced
– Watermelon radish, thinly sliced

Dressing (please do measure with your heart)
– ~½ cup olive oil
– ~¼ cup white wine vinegar
– Juice + zest of ½ an orange
– Salt + pepper

Toss everything together, finish with fennel fronds, and serve fresh.
